FIELD: food industry.
SUBSTANCE: invention relates to technology of preserved compotes production. The method provides for recipe components preparation, scorzonera cutting, drying in microwave field at preset process parametres, frying and milling, frying and mincing chestnut and soya, frying barley grain mixing of scorzonera, barley grain, chestnut and soya, obtained mixture extraction with drinking water at preset process parametres, obtained extract filtering, preparation of syrup based on it, packing of apples and syrup, sealing and sterilisation.
EFFECT: method allows producing compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled fruits in end product without reduce of product's storage time.
