SUBSTANCE: one measures curd clot density and the time of coagulation of milk produced by dam cows and daughters of stud bulls. Curd clot density is measured at least three times during the whole lactation period. For determination these properties values one uses Legendre polynomials with the help whereof one plots curd clot density and coagulation time graphs. Then the average values obtained from individual curd clot density and coagulation time graphs are compared to reference values. One identifies cattle producing milk with modified coagulation properties during the whole of the lactation period if average density of cow milk curd clot is in excess of 34.75 mm and average coagulation time is less than 7.2 min, average curd clot density/average coagulation time with dam cows and daughters of stud bulls being accordingly in excess of 36 mm/less than 6.6. min and in excess of 29.5 mm/less than 8.5 min. This method additionally envisages a stage whereat one identifies cattle kappa-casein genotype. Cattle producing milk with modified coagulation properties are no carriers of kappa-casein E-allele.
EFFECT: method enables identification of animals producing milk with desirable coagulation properties.
