FIELD: food industry.
SUBSTANCE: method is implemented in vacuum by way of alternate heating of the product through supply of heat medium into the vacuum chamber and vacuumisation. Vacuumisation is performed simultaneous with the product centrifugation. During centrifugation the sieve rotates at a 500 - 1000 rpm rate. During the centrifuge operation the sieve rotation rate and direction vary with volatile substances and moisture collected. The installation contains a vacuum drying chamber, a high-speed vacuumisation receiver, a device for heat medium delivery, a rotation drive and a sieve positioned inside the chamber. The rotation drive shaft is introduced into the vacuum chamber, connected with the sieve and equipped with a device for rotation rate and direction adjustment.
EFFECT: group of inventions enabling increase of the drying process performance.
