FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method involved per layer distribution of coagulated albumen in the working chamber and forced delivery of heated air along the chamber for interaction with coagulated albumen. During delivery of heated air its flow direction is switched between that from the working chamber beginning towards its end (forward run) and that from the chamber end towards its beginning (reverse run). Within each forward-reverse pair of runs one provides for equality of initial heated air temperature which is increased in the subsequent pairs of runs. The time of any heated air run termination is defined before equality of temperature of the air and coagulated albumen within the zone of air delivery into the working chamber is reached. The initial temperature of air within the first pair of runs exceeds that of albumen being coagulated by 15 - 20°C while in the last pair of runs the initial air temperature corresponds to the maximum allowable temperature of coagulated albumen dehydration process.
EFFECT: method allows to intensify the dehydration process, prevent albumen overheating and reduce the process implementation energy intensity.
