FIELD: food industry.
SUBSTANCE: method envisages delivery of milled meat or fish and tendon-like components of connective tissues by means of a pump into the dispersive device. Gas is supplied into the device; the tendon-like components of connective tissues are treated with creation of cavitation and dispersion with the supplied gas. The obtained foamed product containing tendon-like components of connective tissues and having density equal to 0.3 - 0.95 g/ml is sterilised at a temperature equal to at least 110°C during at least 10 minutes. The device contains a dispersive device having a chamber and a cylindrical rotor positioned therein and having hollows positioned all around for creation of cavitation. The delivery pump is connected to the inlet hole of the dispersive device. The gas delivery device is positioned between the delivery pump and the inlet hole. The return line passes from the outlet hole of the dispersive device to the inlet hole. A cooling device is positioned downstream the return line.
EFFECT: invention ensures obtainment of a foamed product with usage of tendon-like components of connective tissues.
