FIELD: food industry.
SUBSTANCE: mixture is intended for use in food industry for kissel production. The mixture contains a paste forming additive represented by barley flour dextrinised at a temperature of 105-115°C during 23-27 min, a powder-like natural flavouring component represented by red bilberry and beet root powders and sugar, the components ration being as follows (wt %): barley flour- 18.4-19.6; red bilberry powder - 11.2-11.8; beet root powder - 2.2-2.8; sugar - balance.
EFFECT: kissel production mixture enables improvement of the product organoleptic properties as well as extension of the available beverages range.
