FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to sweet course food concentrates production. The mixture for kissel production contains a paste-forming additive in which capacity one uses native pea starch extracted from smooth-seeded varieties of green peas, a powdered fruit component, citric acid and sugar at the preset component ratio.
EFFECT: invention allows to produce better quality kissel at a low prime cost and extend its storage life, expand the raw materials base and the range of food concentrates.
