FIELD: veterinary science.
SUBSTANCE: biological assay is taken, such as the longest back muscle, heart muscle, liver, lungs, spleen and kidneys, ground, extracted and placed into gas chromatograph. Total concentration of carbonic acids, aldehydes, esters and alcohols is identified. Produced indices are compared to similar indices in a biological assay of healthy animal slaughter products. If indices of total concentration of carbonic acids, aldehydes, esters and alcohols change in investigated biological assay relative to similar indices in biological assay of healthy animal slaughter products, slaughter products are considered to be infected with helminths and are assessed as of bad quality.
EFFECT: simplified investigation process and reduced labour expenditures in assessment of animal slaughter products quality.
