FIELD: food industry.
SUBSTANCE: method for producing a granular product containing C-phycocyanin includes preparing an initial spherifiable mixture of sodium alginate and a protein component, preparing a solution for spherification and forming spheres by dropping the spherifiable mixture into the spherification solution, combining the resulting product with vegetable oil. An aqueous solution of C-phycocyanin from Arthrospira Spirulina platensis is used as a protein component. Spherizable mixture consists of 8 g of sodium alginate, salted fish broth prepared from 910 ml of fish broth with the addition of 9 g of common salt, 90 ml of an aqueous extract of C-phycocyanin, 16 g of sodium citrate; the spherification solution contains 980 ml of water and 20 g of calcium lactate. Next, the resulting product is poured with olive oil at the rate of 1 ml of oil per 100 g of the product.
EFFECT: invention provides for the expansion of the range of dietary biologically active products from raw materials of marine origin with polyfunctional therapeutic and prophylactic properties.
