FIELD: food industry. SUBSTANCE: synthetic caviar consists of grains containing gelatin-sodium alginate matrix and filler made from proteins in the form of dry milk-yolk mixture. Grains also contains colorant - fine activated carbon, food salt, drinking water, and sodium glutamate. Caviar further contains protein-oil emulsion for treatment of grains. Protein-oil emulsion contains gelatin, sodium alginate, fish paste or fish brine, vegetable oil, fine activated carbon, food salt, sodium glutamate, and water. When necessary, preservatives, for instance urotropin and borax, are added to grains and protein-oil emulsion. According to invention, mixture to form grains is prepared as follows. Grain matrix is first prepared by mixing gelatin and sodium alginate at 30-60 C. To that solution at the same temperature, baking soda, dry milk, yolk powder, and fine activated carbon are successively added at continuous stirring. Resultant mixture is passed through die holes to form drops, which are transformed into grains when placed into vegetable oil in state of uniform rotary motion. Upper layer of oil is cooled to 5-10 C. Grains are filtered off from oil and subjected to culinary treatment using dry salting method involving sodium glutamate addition and subsequent mixing with protein- oil emulsion.
