FIELD: technological processes.
SUBSTANCE: invention is related to the field of flour and cereals industry and may be used mainly in mills. Wheat grain after cleaning from admixtures is exposed to hydrothermic treatment, including moistening of grain with water in a vacuum plant with vacuum pulling at residual pressure of 0.060-0.065 MPa, and its subsequent conditioning in deposit silos. Then the grain is processed in hulling mills, impact machines, air separators. Then the grain is additionally moistened, conditioned for a short period of time and is sent into a grinding compartment of a mill.
EFFECT: due to more even moistening of endosperm, improved grinding of each grain hulls, improved yield of high grade flour with simultaneous increase of total flour yield during high grade milling of wheat grain and higher content of raw gluten in high grade flour, which helps to increase its quality.
