FIELD: food industry.
SUBSTANCE: method envisages raw material milling into 700±40 mcm fraction. Then the raw materials undergoes treatment with ultrasound with frequency 18-24 kHz and intensity 50-100 W/cm2 during 0.5-2 min at a temperature of 20-25°C. Then suspension is prepared wherein the ratio of milled raw material to water is 1:3 with the produced mass subsequently maintained during 12 h at a temperature of 20-25°C. Then one proceeds with enzyme hydrolysis using preparations of cellulase in an amount of 2 KMTsS units/ g of reference starch, proteinase in an amount of 1 PS init/ g of reference starch and amylosubtiline in an amount of 0.5 AS init/ g of reference starch and subsequent fermentation of the produced hydrolysate into citric acid.
EFFECT: invention enables improvement of the quality of starch-containing raw materials hydrolysates for citric acid biosynthesis due to enhanced efficiency of polysaccharides removal from vegetal raw material.
