FIELD: biotechnology, in particular food supplement useful in production of bakeries, beer, glucose syrups, starch hydrolysates, alcohol.
SUBSTANCE: claimed supplement contains α-amylase with 700-900 U/g activity; glycoamilase with 10000-15000 U/g activity; xylanase with 300-400 U/g activity; proteinase with 100-200 U/g activity; and maltase with 50-70 U/g activity; as well as (mass %): citric acid 0.08-0.060; calcium citrate 0.02-0.060 and conserving agent 0.05-0.40. As conserving agent potassium sorbate or sodium benzoate, or lactic acid is used.
EFFECT: effective food supplement for hydrolysis of starch and non-starch carbohydrate and proteins containing in plant raw materials.
