FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method envisages carving fish cooled to a temperature from 0 to minus 2°C to produce fillet, dry salting, stuffing a shell of polymeric materials with fish. The produced loafs are maintained during 8-10 hours at a temperature of 0-5°C and frozen. Then the product is cut into slices, a natural antioxidant is pulverised above the product surface, the product is dried at a temperature of 22-27°C during 4-6 hours and cooled.
EFFECT: improved effectiveness of the method.
