FIELD: food industry.

SUBSTANCE: invention relates to flour production. The composition for preparation of a remedy for treatment of grains of bread cereal crops such as wheat and rye contains sodium pyrosulphite and sodium carbonate at a weight ratio from 40:60 to 97:3. This composition is added to water used for bread cereal crop grains wet conditioning. After wet conditioning grains are ground. The composition quantity added to conditioning water is preferably 300-500 g per 1 t of grains, wet conditioning preferably lasting 12-36 h.

EFFECT: invention enables considerable enhancement of whiteness with both premium grade as well as Grade 1 and Grade 2 flour, additionally promoting increase of produced flour water absorbing capacity and yield.
