SUBSTANCE: invention relates to the food industry. The grinding mixture is preliminarily made from prepared grain of wheat and triticale. Grind the finished mixture with the ribbed back along the back (bc./bc.), with a speed of rotation of a fast roller from 4.0 to 6.0 m/s, with a ratio of the circular speeds of fast and slow rotating rollers from 1.5 to 2, 0, with a cutting density of rollers from 8 to 10 pieces per 1 cm, with a groove slope from 8 to 10%, followed by sorting the grinding product on sieves of various sizes.
EFFECT: invention allows developing an effective technology for the joint processing of wheat and triticale grain to obtain wheat-triticale flour, expanding the range and improve the consumer properties of flour-based food products by using processed products of grain wheat-triticale grinding mixture in the bakery and confectionery industry.
