FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to squids treatment methods. The method envisages squid supply into a syrup-making machine filled with 28-30°C drinking water; its heating up to 40-60°C at a rate of 3-5 degrees during 3-5 minutes. Then the squids are supplied into a mixer filled with 60-70°C drinking water till a temperature is 40-60°C; herewith the ratio of water: to squids is 0.8-1.0-1.8-2.5. Simultaneously one stirs the broth at a 5-60 rpm rate during a period required for the squid colour to turn white or white-pink.
EFFECT: invention allows not only to peel a squid body but also to clear a squid from mucus and pigmentation.
