FIELD: food industry, particularly, fat-and-oil industry for production of high-grade fat-and-oil phospholipid product. SUBSTANCE: fat-and-oil phospholipid product contains phospholipids prepared by fourfold mixing of preliminarily heated food vegetable phospholipids with organic solvent, and addition of solution of mixture of citric and succinic acids in flooded acetone in amount of 5-10% to phospholipids mass in solvent before 3rd mixing. Said mixture is used in amount of 1-1.2% to phospholipids mass and at ratio of acids in mixture (1:1)-(3:1). Then carried out are separation of phases into solution of neutral lipids in solvent and phospholipids, and their drying.
