FIELD: food industry.
SUBSTANCE: invention relates to food industry. The beverage preparation system cartridge contains an inlet hole for introduction of an aqueous medium into the cartridge, an outlet hole positioned downstream of the inlet hole and a flow path connecting the inlet hole with the outlet hole. The flow path contains a liquid non-gelated concentrate of the beverage containing one or several thickeners in an amount from nearly 0.01 to nearly 5 wt % of the total quantity. The flow path contains an alginate and/or a thickener with thermally reversible gel formation. The total content of the thickener in the concentrate is 0.01 - 5 wt %. The weight ratio of the beverage concentrate to the aqueous medium is 10:1 - 1:10. The beverage concentrate contains an alginate and/or a thickener with thermally reversible gel formation. For improvement of organoleptic properties one proposes to use sodium alginate and methylcellulose; methylcellulose and at least one alginate are at a weight ratio of 1:5 - 5:1.
EFFECT: invention allows to improve taste, aroma and consistence of beverages.
