FIELD: food industry.

SUBSTANCE: method involves production of the solution to be analysed by way of a product batch maintenance in a boiling water bath combined with stirring for at least 10 minutes, cooling and dilution of the solution with subsequent settling of the sediment and the solution portion sampling, the sampled solution maintenance in an acid medium at a temperature of 70-75°C during 5 minutes, the solution cooling and neutralisation with sodium hydroxide with subsequent polysaccharide sedimentation with alcohol or acetone in the process of centrifugation, washing the sediment with cold 50 % sedimentator solution, complete hydrolysis of the polysaccharide in 1M solution of sulphuric acid during 2 hours at a temperature of 100°C with subsequent neutralisation with sodium hydroxide and the polysaccharide content determination using the glucose analytical curve.
