FIELD: veterinary science.

SUBSTANCE: invention relates to veterinary-sanitary expertise, namely to quality control of milk and milk products. For this purpose, the content of carrageenan in milk and milk products is determined. Method involves taking samples, addition of 0.01 % solution of enzyme amylase, fermentation at the temperature of 48±2 °C for 5 minutes, addition of 50 % trichloracetic acid, centrifugation, addition of ethyl alcohol into supernatant exalbuminous fraction, holding the obtained suspension for 1h at the temperature from minus 18 °C to minus 15°C, repeated centrifugation, dissolving the residue of carrageenan in bidistilled water with the temperature of 100±2 °C and addition of concentrated sulphuric acid. Mixture is heated in a water bath at 100±2 °C, and then cooled to room temperature. Optical density of the carrageenan solution is determined by a photoelectric colorimeter using a calibration curve.

EFFECT: invention allows providing higher accuracy, reduced duration of the analysis, reduced labour cost of the analysis.
