FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to methods of production of protein food products of functional-purpose with soya application. The method envisages generation of a dispersed protein system, its thermal acid coagulation with a 5% water solution of amber or citric acid; the solution contains a Ca:P:Mg bioactive complex produced by way of extraction from egg shell with these acids. The ratio of the dispersed protein system: organic acid solution is 1:0.1. The produced protein-mineral clot is separated from whey, moulded and delivered for sales.
EFFECT: method allows to produce a protein-mineral product with functional properties (antiacidotic, antihypoxic, anti-stress, adaptogenic, detoxification, diuretic, antiviral, actoprotective, radioprotective action, prevention of the organism premature aging, protecting the organism from D2 hypervitaminosis, prevention of intracellular calcium deposition disease), enrichment with a bioactive mineral substances complex produced of natural ingredients.
