FIELD: food industry.

SUBSTANCE: invention relates to freezing products using cryogenic liquids and may be used both at enterprises of food industry and in fish industry for freezing hydrobionts (sea urchin and salmon fishes) spawn in skeins. Hydrobionts spawn freezing is performed in an evaporator freezing chamber with the sealed cover. Spawn is packed in vacuum bags of multi-layered film in an amount of 1-2 kg in one layer 2 cm thick placed onto plates. The plates with spawn are put in a vertical position (with a 5-10 mm clearance between them) into cassettes and placed into the evaporator freezing chamber using a cassette telpher. The internal cavity of the chamber is blown with vaporous carbon dioxide with subsequent filling with liquid carbon dioxide under a pressure of 3.3 MPa. One freezes hydrobionts spawn skeins in the process of carbon dioxide boiling at a boiling temperature continuously varying from 0°C to minus 50°C during 500-550 sec. Using valving one equalises pressure in the evaporator freezing chamber to atmospheric one and removes the cassettes with frozen spawn using the telpher. After removing the cassettes from the evaporator freezing chamber one performs additional freezing of spawn till the temperature is minus 79°C by way of contact with solid carbon dioxide in the containers during transportation.

EFFECT: hydrobionts spawn freezing quality is enhanced while its storage life is extended.
