FIELD: food industry.
SUBSTANCE: invention is intended for usage in food industry and relates to cooling treatment of fish and fish products for its storage and further usage. The method envisages fish or fish products preparation, packing it in equal portions into PET bags and mechanical or thermal closure of the latter. The bags are placed into a vertical freezing apparatus. One performs freezing for the temperature inside the block bulk to be no more than minus 18°C. Each bags has on its surface several holes with diameter from 5 to 20 mcm. The holes account for 10-50% of the bag area.
EFFECT: invention allows one to obtain of a frozen block of products preserving its shape so that to enable its further separation into small portions, convenient for retail marketing, without defrosting or damage to the raw material units integrity.
