FIELD: food industry.
SUBSTANCE: flax seeds refinement method involves removal of phospholipids, free fatty acids, colouring substances, soapstock separation from treated oil and treated oil filtration. Removal of phospholipids, free fatty acids and colouring substances is performed by way of successive treatment of unrefined flax seed oil (at a temperature of 20-30° C) with water solution of citric acid with concentration equal to 5-8%, the solution is preliminarily treated in a zone of permanent electromagnetic field with a magnetic induction of 0.5-1.0 T in an amount of 0.5-1.5% of the oil weight and water solution of sodium silicate with concentration equal to 120-130 g/l in an amount of 1.0-3.0% of the oil weight.
EFFECT: obtaining high oil quality indices and increase of yield of the target product at substantially lower energy and auxiliary materials expenses.
