SUBSTANCE: invention relates to food industry, in particular, to the confectionary branch and may by widely applied for production of a jelly food product for prophylactic alimentation. The composition for prophylactic jelly production contains a jellying agent, highly purified beet pectin, sugar, citric acid, blackthorn, cornel, wild apple or pear fruits milled into powdery condition at specified ratio.
EFFECT: invention allows to produce jelly with high biological and food value, improved taste and flavour and extended storage life.
