FIELD: food industry.
SUBSTANCE: invention relates to food industry and may be used for preservation of quality parameters of food semi-products and products during their storage. Proposed film-forming composition for food purpose contains a combination of low-etherified and high-etherified pectins at ratio of 1:1 in amount of 3–5 wt %, as a plasticiser vegetable oils: sunflower, sea-buckthorn, linseed or their mixture in amount of 0.2–0.3 wt % and aqueous infusion of medicinal herbs of antiseptic action. Water infusion is prepared by steaming of equal amounts of chamomile flowers, large plantain leaves, garden sage, and pot marigold blossom flowers with 2–4 % dry substances content in the ready infusion.
EFFECT: invention is aimed at production of a new edible protective film structure possessing sufficient elasticity for preservation of structure integrity during application to storage facilities and preservation of quality indices of products and semi-finished products during guaranteed storage time.
