FIELD: food industry.

SUBSTANCE: invention relates to food industry, in particular, to methods for production of a food additive applied in manufacture of meat products, for example, chopped semi-products, pastes, sausages. The method is as follows: one prepares cake of oranges or grapefruits wherefrom one preliminarily removes peel and juice. Then the produced cake is dried till moisture content is 5-7% and milled into 10-15 mcm particles. Then the cake is poured with water at a ratio of 1:10 and continuously stirred during 2 hours. The produced suspension is added into mince at a ratio of 1:4.

EFFECT: invention allows to enhance functional-and-technological properties of the additive, increase percentage of the food additive yield, reduce the additive prime cost.
