SUBSTANCE: invention relates to food industry, in particular, to organ meat preserves production. The method envisages preparation of recipe components, carrots and bulb onions cutting, sauteing in bone fat, garlic milling, sunflower flour pouring with drinking water and maintenance for swelling, the listed components mixing with bone broth, tomato paste, sugar, salt, cloves, black hot pepper and laurel leaf, the mixture cooking and addition of acetic acid to produce a sauce, paunch cutting, cooking and cutting, smoked pork brisket cutting, the tripe and brisket packing, sealing and sterilisation.
EFFECT: invention usage will allow to reduce the manufactured target product adhesion to container walls.
