FIELD: food industry.
SUBSTANCE: invention relates to food industry. One proposes a crystallised maltitol powder having maltitol content equal to no more than 99.5. Particles volume distribution per size (determined by the laser granulometry method) is equal to: less than 20% of particles sized less than 200 mcm, less than 6% of particles sized less than 100 mcm and less than 2% of particles sized less than 40 mcm. Flow rate of powder is less than or equal to 10 seconds, volume density during free flowing is equal to more than 0.85 g/ml, packed powder density is equal to more than 0.97 g/ml while compressibility is equal to less than 17%. Additionally one proposes a method for production of crystallised maltitol powder and its usage in pharmaceutical and food industries.
EFFECT: inventions group allows to produce a maltitol powder with properties allowing to use it in various industry branches.
