FIELD: food industry.
SUBSTANCE: method involves production of fruit juice in a water solution and deposition of vegetal protein fraction with high molecular weight (base mass of the fraction having molecular weight within the range of 100 - 600 kDa) by way of regulation of acid pH value and/or temperature in excess of room temperature. One performs mechanical separation of the fraction deposited by the described way, deposition of the coagulated fraction of vegetal protein in a heated condition by way of treatment of the solution produced after separation of the vegetal protein fraction with high molecular weight at a pH value from 2 to 7, preferably - at a pH value from 3 to 6, preferably - at a pH value from 4 to 5, at a temperature of 60 - 90°C, preferably - at a temperature of nearly 80°C. One performs mechanical separation of vegetal protein with medium molecular weight within the range of nearly 14 - 97 kDa. Distribution of molecular weight is essentially within the range of 20 - 60 kDa. In case of necessity, one performs washing of the produced coagulated fraction of vegetal protein with medium molecular weight and mechanical separation, drying of the washed vegetal protein fraction. Application - as emulsifiers for reduction of carbohydrates content and for enrichment with protein.
EFFECT: invention allows to produce vegetal proteins with higher functional properties by way of usage of cheaper and simpler technological processes.
