SUBSTANCE: inventions group relates to food, feed industry and biotechnology. The method for obtaining yeast proteins is as follows. Yeast suspension is provided. It is exposed to thermal plasmolysis at a temperature of 70 to 95°C for a period of time from 30 seconds to 4 hours, preferably from 1 minute to 3 hours, preferably from 40 minutes to 2 hours. The entire amount of activity of at least one ribonuclease and one glucanase is affected, sequentially or simultaneously, at a temperature of 40 to 65°C, preferably 60°C, for a period of 8 to 24 hours, preferably 18 hours. An insoluble fraction and a soluble fraction are separated, where the insoluble fraction is tasteless, has a nucleotide content of less than 3%, and the true protein content is at least 72%. A variant of the method for producing yeast proteins is claimed. The use in human nutrition of a yeast protein extract with a true protein content of at least 72%, obtained by the claimed method. The use in animal nutrition of a yeast protein extract with a true protein content of at least 72%, obtained by the claimed method.

EFFECT: inventions group provides a method for isolating proteins of microorganisms from an insoluble fraction obtained after lysis of these microorganisms, a new method allows obtaining concentrated extracts of non-hydrolyzed proteins with a low content of nucleic acids, aroma and odor and with a good yield.
