FIELD: chemistry.
SUBSTANCE: invention relates to biochemistry. The invention provides methods of producing plant proteins or protein suprastructures. The method may include obtaining a plant or plant material which includes apoplast-localised proteins or protein suprastructures, forming a protoplast/spheroplast fraction and an apoplast fraction from the plant or plant material and separating the apoplast fraction. The apoplast fraction includes plant proteins or protein suprastructures. Alternatively, the proteins or protein suprastructures can be obtained from a plant or plant material using an enzymatic composition which breaks down the cell wall to form a split fraction. The split fraction is filtered to form a filtered fraction and the plant proteins or protein suprastructures are separated from the filtered fraction.
EFFECT: invention widens the range of methods of producing plant proteins.
