FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method for production of carrot phospholipase D envisages obtainment of a liquid carrot extract and its contacting with a clearing medium. The clearing medium includes ions of one or several metals. The clearing stage is performed at pH equal to 7-9. The produced suspension includes a clarified liquid extract and sediment. The clarified liquid extract is separated and combined with a precipitating medium. The precipitating medium includes at least one surface-active substance in a mixture with phospholipids and optionally - with mono-, di- or triglycerides. The produced suspension contains a supernatant and sediment. The sediment is separated and collected as the target product.
EFFECT: invention allows to produce carrot phospholipase D with a high purity degree.
