FIELD: food industry.
SUBSTANCE: inventions group relates to food industry. The method for production of a canola protein isolate containing protein in an amount of at least approximately 90 wt % (N×6.25) in conversion to dry weight involves (a) optionally (i) partial concentration of supernatant from canola protein micellar mass sedimentation till concentration is equal to 50 g/l or less, or (ii) concentration of the supernatant from canola protein micellar mass sedimentation till concentration is equal to at least 50 g/l; (bI) addition of calcium salt (i) to the supernatant from canola protein micellar mass sedimentation without optional stage (a) for providing for electric conductivity equal to 5 to 30 mSm to produce a calcium phytate sediment or (ii) to the partially concentrated supernatant or to the concentrated supernatant with optional state (a) for providing for electric conductivity equal to 2 - 30 mSm to produce a calcium phytate sediment, (iii) the calcium phytate sediment removal from the common solution to produce a clear solution, (iv) optional conditioning of the clear solution pH to the level of 2.0 - 4.0 to produce a clear solution with regulated pH, and (v) without optional stage (aii) or with stage (ai) concentration of the clear solution with optionally regulated pH till concentration equal to at least 50 g/l to produce a clear concentrated solution of canola protein or (bII) (i) addition of initial quantity of calcium salt to the supernatant from canola protein micellar mass sedimentation for providing for electric conductivity equal to 1 - 3.5 mSm which is insufficient for calcium phytate sediment initiation, (ii) the common solution pH conditioning to a level equal to 2.0 - 4.0 to produce an acidified solution, (iii) partial concentration of the acidified solution till concentration is equal to 50 g/l or less, (iv) addition of the remaining calcium salt to the partially concentrated solution for providing for electric conductivity equal to 4 - 30 mSm to cause a sediment formation, (v) the sediment removal from the solution to produce a clear solution with regulated pH and (vi) concentration of the clear solution with regulated pH till concentration equal to at least 50 g/l to produce a concentrated solution of canola protein; (c) optional diafiltration of the clear concentrated solution of canola protein, (d) optional performance of the stage of removal of colour (colouring substances) with usage of optionally diafiltrated clear concentrated solution of canola protein and (e) drying of optionally decolourised and optionally diafiltrated clear concentrated protein solution. Additionally, one proposes a version of the method for canola protein isolate manufacture.
EFFECT: inventions group is aimed at manufacture of a product with good solubility within a wide range of pH acidic values, transparency in water medium which makes it possible to use the product with pH acidic values, the product addition without deterioration of the said beverages transparency.
