FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method is implemented by way of starch grains encapsulation with a reaction mixture produced as a result of chemical reaction of at least one cross-linkable polysaccharide. The polysaccharide is preliminarily mixed with ingredients for food products manufacture and, at least, one cross-linking agent. Additionally, the invention relates to a method for food products preparation and to food products manufactured using the present method.
EFFECT: invention ensures manufacture of a food product characterised by slow accessibility of starch grains and prolonged release of glucose into blood circulation.
