SUBSTANCE: method of manufacturing canola protein isolate implies extraction of meal, solubilisation of protein producing water protein solution with pH from 5 to 6.8, separation of water protein solution, increase of protein concentration, dilution of the above protein solution with cooled water producing individual protein micelles in water phase, precipitation of protein micelles producing protein micelle mass, isolation of protein micelle mass from the supernatant fluid; the protein micelle mass has protein content of at least 90 % wt. (N x 6.25) on dry weight basis. During processing meal of the canola oil seeds is washed with alcohol by dispersing the meal in alcohol in the proportion weight/volume of 1:3 to 1:10 and/or concentrated protein solution is diafiltrated up to the above dilution degree and/or the micelle protein mass is dried and the dried canola protein isolate is extracted by alcohol water solution and/or concentrated protein solution is pasteurised up to the above dilution degree.
EFFECT: decreasing protein isolate colouration.
