FIELD: food industry.

SUBSTANCE: invention relates to food industry and may be used for liquid food products pasteurisation. The electric pasteuriser has a body with the following components placed in it: a liquid flow controller, a temperature measuring controller, an electric energy metre, a liquid flow indicator, nipples for the initial product input and the ready product output as well as a pipe-line whereon the initial and the ready products temperature sensors are installed, communicating with the temperature measuring controller, and a liquid flow sensor communicating with the liquid flow indicator. An infrared heating section (with thin-film heating elements designed in the form of quartz balls, hollow and interconnected) and an intermediate vessel equipped with the ready product temperature sensor are placed on the pipe-line between the sensors of liquid flow, the initial product temperature and the ready product temperature. The pipe-line placed inside the electric pasteuriser communicates with a pipe-line via the nipples for the initial product input and the ready product output; the latter pipe-line includes a centrifugal pump, a liquid flow metre, a bypass pipe-line with the possibility of pressure adjustment, a manometer, a sample selection cock, a flow switching cock and connects the electric pasteuriser to the initial and the ready product vessels.

EFFECT: invention usage will allow to improve the ready product quality due to pasteurisation temperature reduction, sterilisation process intensification and energy expenditures reduction.
