SUBSTANCE: in the method of activation of yeast gums in a solution with usage of polysaccharides containing in the main circuit b-glucans, the activator is Saraksan, and yeast gum is mannan of baking yeast at the ratio of Saraksan - yeast gum 1:1-1:1.2.
EFFECT: invention makes it possible to improve efficiency of activation of yeast gums.
