FIELD: biotechnology.

SUBSTANCE: invention relates to biotechnology and can be used in production of biologically active food additives, feed and medical purposes. Method includes two-step processing of mycelial biomass of fungus Aspergillus oryzae 12-84 (RCAM 01134) at natural pH value under action of intracellular enzymes. End product is obtained in form of enzymolysate. At 1st stage maintained at 48-50 °C for 1 hour 45 minutes - 2 hours 15 minutes, at 2nd step temperature is lowered to 38-40 °C for 2 hours 45 minutes - 3 hours 15 minutes and celloviridin is further used as a source of exo-β-glucanase. Temperature is then lowered to 30-32 °C and product is kept at said temperature for 5-6 hours.

EFFECT: invention improves quality of obtained biologically active additive provide increase depth hydrolysis of polymers and cells get biologically active additive with a wide range of functional properties.
