FIELD: biotechnology.
SUBSTANCE: invention can be used for production of biologically active additives (BAA) for food, nutrition and medical supplies. The method consists in two-step hydrolysis of the combined yeast and fungal biomass under the action of intracellular enzymes of Aspergillus oryzae RCAM 01134 fungus to provide the target product as a fermentative lysate. At the 1st stage, the temperature is maintained at 48-50°C for 1 hour and 45 minutes - 2 hours and 15 minutes. At the 2nd stage of hydrolysis, the temperature is lowered to 38-40°C and the process is continued for 3 hours and 45 minutes - 4 hours and 15 minutes.
EFFECT: invention reduces the process of BAA obtaining, provides increased depth of combined microbial biomass polymers hydrolysis with increased formation of low molecular weight peptides, free amino acids and oligosaccharides, reception of BAA with a wide range of functional properties.
