FIELD: food industry.

SUBSTANCE: invention is intended for usage in meat industry and relates to physicochemical technologies for meat raw material treatment. The method is implemented by way of subjecting meat raw material to action of LF electromagnetic field energy whereof exceeds that required for disruption of hydrogen bonds in the meat raw material, the field generated with unipolar triangular-shaped pulses with frequency equal to 10-200 Hz, corresponding to resonance frequency of intramolecular transformations in the meat raw material. The exposure duration time is determined from the formula: T = a b h ϑ E U , where a - thickness of the meat piece being treated; b - length; h - distance between the object being treated and the radiation device; υ - electric pulse radiation frequency; E - electric field intensity; U - radiation device power supply voltage.

EFFECT: method ensures manufacture of environmentally safe meat raw material and improved accessibility for further processing into meat products as well as extension of storage life due to reduced microbial contamination and reduction of material and energy expenditures on ready products preparation.
