FIELD: food industry.
SUBSTANCE: invention relates to production of food products of prolonged storage, in particular, to production of natural cheese chips. The method involves natural cheese cutting into 2.0-2.5 mm thick slices, flavouring agent application onto them, in case of necessity, subsequent treatment of slices in a microwave oven with simultaneous drying under vacuum conditions till foamed structure production, cooling and packaging the produced chips. Before treatment the slices are positioned onto a needle-shaped support that is placed into the said microwave oven under vacuum conditions, treated till the said foamed structure generation during 30-60 sec at specific microwave field power equal to 0.9-2.3 kW/kg under a pressure of 4-8 mm Hg.
EFFECT: invention ensures cheese chips production duration reduction and the ready product quality improvement consisting in providing for foamy crispy consistence of the chips; the resultant chips are flat and foamed across the whole bulk of the slice, having a cheese taste and a natural cheese colour without foreign after-tastes or aromas.
