FIELD: food industry.

SUBSTANCE: invention relates to dairy industry, in particular to its cheese-making branch. The cheese-making machine represents a cylindrical vertical tub with double wall and is equipped with a bubbling device positioned at the bottom; the said device is represented by a disc wherein an inner cavity is formed with outlet hole in the upper wall and a nipple in the lower wall for heated air delivery into the cavity by way of a coiled tube connected to a compressor. Positioned between the tub double walls is a water jacket, the coiled tube located inside the water jacket.

EFFECT: invention allows to increase the quality of cheese grains produced within the whole of the tub volume.
