FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to production of vegetal raw material food products. The vegetal raw material food product contains vegetal sources of fructose, protein and food fibres, a structure-forming component, a preserving agent and an emulsifier. The source of fructose and food fibres are represented by water-melon pulp preliminarily milled and dehydrated till residual moisture content is equal to 20-30%. The protein source is represented by pumpkin flour with lipid content equal to no more than 20%. The structure-forming component is represented by pectin; the preserving agent and emulsifier are represented by sodium sorbate and sorbitol syrup respectively. The components are used at the following ratio, per 100 g: water-melon pulp dehydrated to 20-30% - 67-70%, pumpkin flour with lipid content equal to no more than 2.0% - 22-23%, pectin -0.5-1.0%), sodium sorbate - 0.5-1.0%), sorbitol syrup - 7-8%). Dry substances content in the ready product is equal to 80-90%, that of fructose - 40-50%, food fibres - 5-10%, protein - 10-13%.
EFFECT: invention allows to manufacture a new product in the form of cucurbits crops pastille percentage ratio of components whereof does not affect consistence and organoleptic properties of the product.
