FIELD: food industry.
SUBSTANCE: invention refers to food industry, in particular - to production of a functional food product based on freshly sprouted grains. The functional food product production method includes grains washing with water, grains treatment with a disinfecting agent, moistened grains incubation for sprouting and rains fermentation in fermenter chambers. Grains incubation is performed by way of moistening to a 60-65% moisture content at a temperature equal to 12-24°C for grains sprouting until obtainment of sprouts the length whereof exceeds that of the grains 1.5-2 times. The disinfecting agent used is represented by sucrose polydimethylammonium chloride taken in an amount of 10 ml of 25% solution in 500 ml of water per 1 kg of grains at a temperature of 16-24°C. The device for the proposed method implementation is characterised by the presence of two vessels placed one on top of the other. The bottom of each vessel is perforated, the size of the holes selected so that to exclude passage of grains through them. Installed at the bottom of each vessel is a grid with mesh size excluding passage of grains through the mesh.
EFFECT: invention enables the technological cycle reduction in combination with production of a functional food product free of spoilage by pathogenic microorganisms as well as mould and fungi with integrity of freshly sprouted grains preserved.
