FIELD: food industry.
SUBSTANCE: following is proposed: a method of producing sprouted grains of spring wheat and spring barley, according to which the dry grains are initially treated with ionizing radiation with low doses of gamma radiation of 5–10 Gy for 10–20 minutes. Then the grains are washed with water for 0.5–1.0 hours and filled with water for 5–6 hours until the moisture content in the grain is 42–44%. Then the water-grain mixture is stirred for 10–15 minutes every 2–3 hours and after 14–18 hours compressed air is supplied at a pressure of 1 MPa. The sprouted grain is separated, dried until a moisture content of 14% for wheat and 14.5% for barley is achieved and cooled.
EFFECT: invention is aimed at optimizing technological parameters for germinating grains of grain crops.
