FIELD: food industry.
SUBSTANCE: invention relates to food industry. The food mineral colouring agent contains a colouring component in the form of at least one ferrous oxide based colouring pigment. The colouring agent is made in the form of a fat-containing dispersed system. The dispersed phase is represented by the colouring component particles sized 20-60 mcm; the dispersed system is represented by a solid food fat substance. The colouring agent includes an antioxidant. The colouring agent components are taken at a specified weight ratio. The food mineral colouring agent production method involves the colouring component mixing with the solid food fat substance. Stirring is performed till the colouring component particles are sized 20-60 mcm. Then the antioxidant is added. Further stirring is performed at the initial value of the fat substance melting temperature interval at a stirring rate equal to 80-120 rpm during 50-70 minutes.
EFFECT: invention allows to manufacture a food colouring agent that may be dosed so that to avoid the colouring agent over-expenditure and product nonuniform colouring.
