FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method involves grinding of collagen-containing raw material with flesh lumps and its treatment with a liquid ferment preparation of fish internals taken in a quantity of 40-60% of the raw material weight during 8 hours at a temperature of 45-55°C with subsequent washing. Then the raw material is cooked in a medium of thermally treated dairy whey at a ratio of raw material to dairy why equal to 1:3 with further liquid phase separation. Then one performs two further cooking stages with fat separation from the liquid phase after each phase, After three serial cooking stages the liquid phases are mixed, filtered and concentrated.
EFFECT: invention allows to improve the natural structure forming agent quality characteristics.
