FIELD: food industry.
SUBSTANCE: invention relates to fish industry. After skeins screening, the connective tissue is frozen at a temperature of minus 18°C and supplied for lyophilic drying. When the temperature is equal to minus 35 - 70°C, a vacuum is created within the range of 30-50 mm Hg and drying is performed under vacuum till water content in the ready product is equal to 6-8%.
EFFECT: invention allows to manufacture a dry protein-and-lipid concentrate of fish skeins connective tissue.
